Rooted in the Japanese phrase “omakase,” meaning “I leave it up to you,” this revered dining tradition invites guests to place their trust in the chef’s hands. At The Naisho Room, Executive Sushi Chef James Kim transforms this tradition into an intimate, multi-sensory journey—one that blends precision, creativity, and storytelling through food.

Limited to just eight seats, our Omakase experience offers an exclusive front-row view into Chef Kim’s artistry. Each evening, guests are guided through a meticulously curated 19–22 course menu featuring a dynamic progression of small bites, hot and cold dishes, and exceptional sushi and sashimi. A selection of seafood is sourced directly from Tokyo’s Toyosu Fish Market, aged to enhance depth and flavor, and paired with seasonal ingredients that reflect both tradition and innovation.

To elevate the experience, guests may opt for a sake and wine pairing, thoughtfully selected to complement each course and enhance the journey. The pairing adds a layer of indulgence to an already unforgettable evening.

Available Wednesday through Saturday, The Naisho Room’s Omakase is more than a meal—it’s a curated escape into the heart of Japanese culinary philosophy, led by one of the region’s most respected sushi chefs.
